Tempeh is one of my favourite plant-based protein sources! Made from fermented soybeans, it is very nutrient-dense, protein-rich and especially good for absorbing any marinade it is put in, making it super versatile. The fermentation process it undergoes also makes it very beneficial for digestive health and inflammation.
Here is my meatless version of a buffalo salad and blue cheese:
Ingredients:
For the buffalo tempeh:
-85 grams of plain tempeh
-1/4 cup of Frank's RedHot (or any other hot pepper sauce)
-1 tablespoon olive oil
-2 teaspoons white vinegar
-1/4 tsp Worcestershire sauce
-1/8 teaspoon cayenne pepper
-1 clove of garlic (or 1/8 teaspoon of garlic powder)
-Salt and pepper to taste
For the salad
-30g blue cheese (gorgonzola)
-Mixed greens
-Cucumber
-Tomatoes
-Red onions
- Cashew "Ranch" Sauce
